Ingredients

  • 1 cup panko breadcrumbs
  • 1 egg
  • 1/2 cup all-purpose flour
  • Salt and pepper
  • 1/2 cup mayonnaise
  • 23 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (optional)
  • Cooked rice or quinoa
  • Toppings: green onions, sesame seeds, and sliced radishes

Instructions

  1. Prepare the salmon by cutting it into bite-sized pieces.
  2. Set up a breading station with seasoned flour, beaten egg, and breadcrumbs.
  3. Coat each salmon piece in flour, then egg, and then breadcrumbs.
  4. Heat oil in a skillet over medium-high heat.
  5. Fry the salmon bites for 3-4 minutes on each side until golden and crispy.
  6. Mix mayonnaise, sweet chili sauce, and Sriracha to make the Bang Bang sauce.
  7. Assemble bowls with rice or quinoa, salmon bites, Bang Bang sauce, and toppings.
