- 12 oz. pasta (fettuccine or penne)
- 2 boneless, skinless chicken breasts (diced)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 cup sun-dried tomatoes (chopped)
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 cup chicken broth
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese (for serving)
Instructions
- In a large pot of salted boiling water, cook your pasta according to package instructions. Drain and set aside, saving a cup of pasta water.
- In the same pot, heat the olive oil over medium heat. Add the diced chicken, seasoning it with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes.
- Toss in the minced garlic and chopped sun-dried tomatoes. Sauté for an additional 2 minutes.
- Pour in the heavy cream, chicken broth, and Italian seasoning. Stir gently, allowing the sauce to come to a gentle simmer.
- Add in the fresh spinach and stir until wilted.
- Add the drained pasta to the pot, stirring well to coat every strand in that creamy goodness.
