Ingredients

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and let it sizzle for about 30 seconds.
  3. Add the diced tomatoes and their juices, then pour in the vegetable broth, stirring to combine.
  4. Season with salt and pepper, and let the mixture simmer for about 15 minutes.
  5. Remove from heat and add the heavy cream, stirring until incorporated.
  6. Use an immersion blender to puree the soup until silky smooth.
  7. Stir in the fresh basil, adjusting seasoning if necessary.

Notes

For a chunkier soup, leave some diced tomatoes unblended. Can substitute heavy cream with Greek yogurt or coconut milk for lighter options.
