- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and let it sizzle for about 30 seconds.
- Add the diced tomatoes and their juices, then pour in the vegetable broth, stirring to combine.
- Season with salt and pepper, and let the mixture simmer for about 15 minutes.
- Remove from heat and add the heavy cream, stirring until incorporated.
- Use an immersion blender to puree the soup until silky smooth.
- Stir in the fresh basil, adjusting seasoning if necessary.
Notes
For a chunkier soup, leave some diced tomatoes unblended. Can substitute heavy cream with Greek yogurt or coconut milk for lighter options.
