- 2 boneless and skinless chicken breasts
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/4 cup fresh basil, chopped
- 1 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat and add minced garlic; sauté for 1 minute.
- Season chicken breasts with salt and pepper, add to skillet, and cook for 5-7 minutes on each side until golden and cooked through; remove and set aside.
- Add chopped sun-dried tomatoes to the same skillet and stir for 2-3 minutes.
- Pour in the heavy cream and let it simmer until it thickens.
- Add fresh spinach and basil; stir until wilted and incorporated.
- Return chicken to the skillet, coat it in the creamy mixture, and let simmer for 3-5 minutes.
- Serve hot, garnished with more fresh basil if desired.
Notes
For a lighter version, consider using half-and-half or Greek yogurt instead of heavy cream. You can add extra vegetables or herbs for variation.
