- 8 oz pasta (fettuccine or penne)
- 1 lb chicken breast, diced
- 1 cup sun dried tomatoes, packed in oil, drained and chopped
- 1 cup heavy cream (or coconut cream for dairy-free)
- 3–4 cloves garlic, minced
- ½ cup Parmesan cheese, grated (optional)
- 2 cups spinach, fresh or frozen
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and cook the pasta until al dente. Reserve a cup of pasta water before draining.
- In a large skillet over medium-high heat, warm the olive oil. Add the diced chicken, season with salt, and cook until golden, about 5-7 minutes.
- Add the minced garlic and chopped sun dried tomatoes to the skillet and sauté for another 2 minutes until fragrant.
- Pour in the heavy cream and mix well, bringing the mixture to a simmer. Allow it to thicken slightly for 3-5 minutes.
- Stir in the fresh spinach and parmesan cheese, letting the spinach wilt and the cheese melt, creating a creamy sauce.
- Add the drained pasta to the skillet, tossing everything together. If the sauce is too thick, gradually add reserved pasta water to achieve desired consistency.
- Adjust the flavors with additional salt and pepper, and serve immediately, garnished with extra parmesan if desired.
Notes
For a veggie boost, add seasonal vegetables like zucchini or bell peppers. A pinch of red pepper flakes can spice things up!
