Ingredients

  • 2 tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth (or Chicken Broth)
  • 2 Potatoes, diced (Yukon Gold or Russet)
  • 4 cups Fresh Spinach
  • 2 tablespoons Nutritional Yeast (optional)
  • Salt and Pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Toss in minced garlic and cook for an additional minute.
  2. Stir in diced potatoes, coating them in the warm oil and onion mixture. Let them sit for 2-3 minutes.
  3. Pour in vegetable broth and bring the mixture to a gentle boil. Reduce heat and let simmer for about 10 minutes, or until potatoes are tender.
  4. Stir in fresh spinach and allow it to wilt and blend with the soup.
  5. Using an immersion blender, puree the soup until it reaches your desired smoothness.
  6. Stir in nutritional yeast (if using), salt, and pepper. Taste and adjust seasoning as needed.
  7. Ladle the soup into bowls and serve hot.

Notes

For added flavors, consider roasting the potatoes before adding, or topping the soup with grated cheese. Store in an airtight container in the fridge for up to five days.
