Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes.
- Add the diced onion to the pot and sauté until translucent, about 3 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes.
- Pour in the chicken broth, stirring well to combine, and bring to a gentle simmer.
- Stir in the heavy cream and allow it to blend with the broth.
- Add the chopped kale or spinach and diced tomatoes, simmering for 5-10 minutes until the greens are tender.
- Gradually mix in the Parmesan cheese, stirring until it melts into the soup. Adjust seasoning with salt, pepper, and red pepper flakes if desired.
- Ladle the soup into bowls and enjoy.
Notes
For a lighter version, substitute heavy cream with half-and-half or Greek yogurt. You can also add seasonal vegetables for variety.
