Ingredients

  • 1 pound of boneless, skinless chicken breast
  • 8 ounces of orzo pasta
  • 8 ounces of cremini mushrooms
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • 1 teaspoon of dried thyme
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken, seasoning with salt and pepper, cooking for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest.
  2. Add more olive oil if needed to the skillet, then add the diced onion and cook until translucent, about 3 minutes. Add garlic and mushrooms, cooking for an additional 4-5 minutes until browned.
  3. Stir in the orzo and dried thyme, letting it absorb flavors for about a minute.
  4. Pour in the chicken broth, bringing to a gentle simmer for about 10-12 minutes until orzo is tender.
  5. Lower heat and mix in heavy cream, stirring until well combined and heated through.
  6. Slice the chicken and serve atop the orzo, garnishing with fresh herbs if desired.

Notes
