- 1 pound of boneless, skinless chicken breast
- 8 ounces of orzo pasta
- 8 ounces of cremini mushrooms
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 4 cups of chicken broth
- 1 cup of heavy cream
- 1 teaspoon of dried thyme
- Salt and pepper, to taste
- Olive oil, for sautéing
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken, seasoning with salt and pepper, cooking for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest.
- Add more olive oil if needed to the skillet, then add the diced onion and cook until translucent, about 3 minutes. Add garlic and mushrooms, cooking for an additional 4-5 minutes until browned.
- Stir in the orzo and dried thyme, letting it absorb flavors for about a minute.
- Pour in the chicken broth, bringing to a gentle simmer for about 10-12 minutes until orzo is tender.
- Lower heat and mix in heavy cream, stirring until well combined and heated through.
- Slice the chicken and serve atop the orzo, garnishing with fresh herbs if desired.
Notes
Leftovers can be refrigerated for three days or frozen for up to three months.
