Ingredients

  • 300g spaghetti or your preferred pasta
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 cup heavy cream
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 cup broccoli florets and/or bell peppers
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.
  2. Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 4 minutes until softened. Add the minced garlic and sauté for another minute until fragrant.
  3. Make the Sauce: Reduce the heat to low. Pour in the heavy cream and stir in the gochujang and soy sauce. Allow it to gently simmer for about 5 minutes.
  4. Incorporate Veggies: Stir in the broccoli and bell peppers, cooking for another 3-4 minutes until just tender.
  5. Combine Pasta & Sauce: Add the cooked pasta to the skillet, tossing well to coat. If the sauce seems too thick, gradually stir in reserved pasta water until you reach your desired consistency.
  6. Add Cheese: Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
  7. Serve and Garnish: Divide the pasta among plates, garnish with fresh basil or parsley, and enjoy immediately!

Notes

Feel free to customize with different vegetables or proteins; also consider using coconut cream and nutritional yeast for vegan options.
