- 4 boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Pat dry the chicken breasts with paper towels and season both sides with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Once shimmering, add chicken and sear for about 6 minutes on each side until golden brown.
- Reduce heat to medium and add minced garlic to the pan, cooking for about a minute until fragrant.
- Pour in chicken broth to deglaze the pan, then stir in heavy cream, thyme, and rosemary. Bring to a gentle simmer.
- Return chicken to the skillet and let it simmer in the sauce for another 5-10 minutes until cooked through and sauce thickens.
- Remove from heat and sprinkle with fresh parsley. Serve over rice, potatoes, or pasta.
Notes
For a lighter version, substitute heavy cream with Greek yogurt. Feel free to add vegetables like peas or asparagus for extra nutrition.
