Ingredients

  • 12 ounces pasta (penne or fettuccine)
  • 2 boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup pesto sauce
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt & pepper to taste

Instructions

  1. In a large pot, boil salted water and cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken with a sprinkle of salt and pepper; sauté until golden brown (about 6-8 minutes).
  3. Add minced garlic and stir for about 1 minute.
  4. Reduce heat to low, add pesto sauce, and stir to combine.
  5. Slowly pour in heavy cream, mixing well until a creamy sauce forms. If too thick, add reserved pasta water to reach desired consistency.
  6. Fold in cooked pasta and grated Parmesan cheese; cook for an additional 2-3 minutes until heated through.
  7. Plate the dish and garnish with extra Parmesan and fresh basil if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months.
