Ingredients

- 12 ounces pasta (penne or fettuccine)
- 2 boneless, skinless chicken breasts, diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup pesto sauce
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt & pepper to taste
Instructions
- In a large pot, boil salted water and cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken with a sprinkle of salt and pepper; sauté until golden brown (about 6-8 minutes).
- Add minced garlic and stir for about 1 minute.
- Reduce heat to low, add pesto sauce, and stir to combine.
- Slowly pour in heavy cream, mixing well until a creamy sauce forms. If too thick, add reserved pasta water to reach desired consistency.
- Fold in cooked pasta and grated Parmesan cheese; cook for an additional 2-3 minutes until heated through.
- Plate the dish and garnish with extra Parmesan and fresh basil if desired.

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months.
