Instructions
- In a large pot, heat the olive oil over medium heat. Add diced onion, minced garlic, chopped celery, and sliced carrots. Cook until the vegetables are tender, about 5 minutes.
- Pour in the chicken broth and bring it to a gentle boil.
- Once boiling, stir in the egg noodles. Cook according to package instructions, usually around 6 to 8 minutes until they are tender yet still al dente.
- As the noodles cook, add the shredded chicken to the pot, stirring to combine. Gradually pour in the heavy cream, stirring gently.
- Sprinkle in fresh thyme, salt, and pepper to taste, and allow it to simmer for an additional 2-3 minutes before serving.
