Ingredients

- 1 pound Chicken Breast, boneless and skinless
- 8 ounces Mushrooms, preferably cremini or baby bella
- 8 ounces Pasta, like fettuccine or penne
- 3 cloves Garlic, minced
- 1 medium Onion, chopped finely
- 1 cup Chicken Broth, low-sodium
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese, freshly grated
- 2 tablespoons Olive Oil
- Fresh Parsley, chopped (for garnish)
- Salt and Pepper, to taste
Instructions
- Cook the Pasta: Boil salted water, add pasta, and cook until al dente. Reserve 1 cup of pasta water before draining.
- Sauté the Chicken: Heat olive oil in a large skillet, add chicken seasoned with salt and pepper, and cook for 6-8 minutes until golden brown. Remove and let rest.
- Sauté the Vegetables: In the same skillet, add onions and garlic, sauté for 2-3 minutes. Add mushrooms, cooking until tender and browned (5-7 minutes).
- Create the Sauce: Pour in chicken broth, scrape up brown bits, then simmer for a couple of minutes. Stir in heavy cream and Parmesan cheese.
- Mix It All Together: Slice cooked chicken, add back to the skillet, combine with pasta, and add reserved pasta water as needed for desired creaminess. Season with more salt and pepper to taste.
- Serve: Garnish with chopped parsley and additional Parmesan as desired. Enjoy!
