Ingredients

  • 1 pound chicken breast
  • 8 ounces orzo pasta
  • 8 ounces mushrooms (cremini or button)
  • 1 medium onion
  • 3 cloves garlic
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Olive oil and butter
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: chop the onion, slice the mushrooms, and mince the garlic.
  2. Sauté the chicken in a large skillet with olive oil and butter until golden, then set aside.
  3. In the same skillet, cook onions until translucent, followed by mushrooms and garlic until softened.
  4. Stir in the orzo and toast lightly for 2 minutes, then add chicken broth, bring to boil, and simmer for 10 minutes.
  5. Stir in heavy cream and thyme, cooking for an additional 5 minutes to thicken the sauce.
  6. Return sliced chicken to the skillet, combine gently, adjust seasoning, and serve immediately.

Notes

You can substitute half-and-half for the heavy cream or use a plant-based milk for a lighter version. Add seasonal vegetables for extra nutrition.
