- 1 pound chicken breast
- 8 ounces orzo pasta
- 8 ounces mushrooms (cremini or button)
- 1 medium onion
- 3 cloves garlic
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Olive oil and butter
- Salt and pepper to taste
Instructions
- Prepare the ingredients: chop the onion, slice the mushrooms, and mince the garlic.
- Sauté the chicken in a large skillet with olive oil and butter until golden, then set aside.
- In the same skillet, cook onions until translucent, followed by mushrooms and garlic until softened.
- Stir in the orzo and toast lightly for 2 minutes, then add chicken broth, bring to boil, and simmer for 10 minutes.
- Stir in heavy cream and thyme, cooking for an additional 5 minutes to thicken the sauce.
- Return sliced chicken to the skillet, combine gently, adjust seasoning, and serve immediately.
Notes
You can substitute half-and-half for the heavy cream or use a plant-based milk for a lighter version. Add seasonal vegetables for extra nutrition.
