- 2 cups cooked egg noodles
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions
- Cook the egg noodles according to package instructions, drain, and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken with salt and pepper, and cook for about 5-7 minutes per side until cooked through. Transfer to a plate and tent with foil.
- Add the chopped onions to the same skillet and cook until soft and translucent for about 5 minutes. Then, add the minced garlic and cook for an additional minute.
- Pour in the chicken broth and scrape up any bits from the pan. Bring it to a simmer and let it reduce for 3-4 minutes.
- Lower the heat and stir in the heavy cream, allowing the sauce to simmer until it thickens, about 2-3 minutes.
- Slice the cooked chicken into bite-sized pieces and return it to the skillet along with the noodles. Toss to coat in the sauce. Season with thyme, salt, and pepper to taste.
- Garnish with fresh parsley and serve immediately.
Notes
For a lighter version, substitute heavy cream with Greek yogurt or silken tofu. Add steamed broccoli or peas for extra nutrients.
