Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and sauté for an additional minute until fragrant.
- Toss in the shredded chicken and broccoli florets, giving it a good stir to combine everything.
- Add the chicken broth and bring the mixture to a simmer.
- After about 15 minutes of simmering, when the broccoli is tender, stir in the heavy cream.
- Taste and season with salt and pepper to your preference.
- Ladle the soup into bowls and garnish with fresh herbs if desired.
Notes
For lighter options, substitute heavy cream with Greek yogurt or plant-based cream. Don’t overcook the broccoli to maintain its bright green color.
