- 3 ripe bananas
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 8 oz cream cheese, softened
- Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a mixing bowl until smooth.
- Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition. Add the vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture and fold in the mashed bananas.
- In a small bowl, beat the softened cream cheese until smooth.
- Grease a 9×5 inch loaf pan. Pour half of the banana batter into the pan, spread the cream cheese mixture on top, then pour the remaining banana batter over.
- Bake for about 50 minutes, or until a toothpick inserted comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For lighter options, consider substituting Greek yogurt for the butter or using whole wheat flour. You can also add spices like cinnamon or nutmeg for extra warmth.
