- 1 pound ground beef or turkey (choose lean for a healthier option)
- 1 cup diced onion (yellow or sweet)
- 2 cloves fresh garlic, minced (or garlic powder if unavailable)
- 1 can (15 oz) diced tomatoes (preferably no-salt-added)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 1 can (10.5 oz) cream of mushroom soup (or homemade alternative)
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
Instructions
- In a large skillet, on medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes.
- Add diced onion and minced garlic; stir until the onion is translucent (about 3-4 minutes).
- Add diced tomatoes (with juice), frozen mixed vegetables, cream of mushroom soup, and Italian herbs; mix well.
- Season with salt and pepper, and adjust to taste.
- Transfer mixture to a greased 9×13-inch baking dish.
- Sprinkle shredded cheddar cheese generously on top.
- Preheat oven to 350°F (175°C) and bake for 25 minutes, or until cheese is bubbly and golden brown.
Notes
Leftovers can be stored in an airtight container for up to 4 days, or frozen for up to 3 months. Reheat at 350°F (175°C) for about 25 minutes.
