- 8 oz lo mein noodles
- 1 cup mixed vegetables (carrots, bell peppers, snap peas)
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- Green onions, chopped (for garnish)
Instructions
- Cook the Noodles: In a pot of boiling salted water, cook the lo mein noodles according to the package instructions until al dente. Drain and rinse under cold water.
- Prepare the Chicken: Slice the chicken breasts into thin strips.
- Stir-fry the Chicken: Heat a large skillet or wok over medium-high heat, add sesame oil, and cook the chicken until browned and cooked through, about 5-7 minutes.
- Add Garlic and Vegetables: Toss in the minced garlic and mixed veggies, stir-fry for another 3-4 minutes.
- Combine Everything: Add the cooked noodles to the skillet, pouring in the soy sauce and oyster sauce. Toss to coat.
- Serve: Plate the Chicken Lo Mein and sprinkle over fresh green onions.
Notes
Use whole wheat noodles for a healthier option. This dish can be made ahead and stored for quick meals.
