Ingredients

  • 15 oz can black beans, rinsed and drained

  • 15 oz can black-eyed peas, rinsed and drained

  • 15 oz can sweet corn, drained

  • 14.5 oz can diced tomatoes, drained

  • 1 avocado, diced

  • 1/2 cup chopped onion

  • 1/2 cup chopped cilantro

  • 3/4 cup zesty Italian dressing

  • 1 tablespoon lime juice


Instructions

  • Drain and rinse the black beans, black-eyed peas, and corn. Drain the diced tomatoes.

  • In a large bowl, combine the beans, corn, tomatoes, avocado, onion, and cilantro.

  • Add the Italian dressing and lime juice. Stir gently to combine.

  • Cover and refrigerate for at least 1 hour to let the flavors blend.

  • Stir before serving. Serve with tortilla chips, crackers, or as a topping for tacos or grilled meats.
