  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/2 cups (310 g) all-purpose flour
  • 1/2 cup (50 g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups crushed chocolate sandwich cookies (like oreo-style), divided
  • Filling: 1/2 cup (115 g) unsalted butter, softened
  • 1 1/2 cups (180 g) powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and airy — about 3 minutes.
  3. Add eggs one at a time, beating well after each addition, then stir in the vanilla.
  4. Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fold in 1 cup of crushed chocolate sandwich cookies.
  7. Scoop rounded tablespoons of dough, roll each into a ball, then roll the top in the remaining crushed cookies.
  8. Place 2 inches apart on prepared baking sheets.
  9. Bake for 10–12 minutes until the edges are set but centers are slightly soft.
  10. Let cool on the sheet for 5 minutes before transferring to a wire rack.
  11. Beat the filling ingredients until light and fluffy.
  12. Spread or pipe a generous dollop of filling on the flat side of one cookie and sandwich with another.
  13. Serve warm or at room temperature.

Chill the dough for thicker cookies. Use dairy-free alternatives for a vegan option.
