- 4 large onions (yellow or sweet)
- 4 tablespoons unsalted butter (or olive oil for a lighter option)
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 4 cups beef or vegetable broth
- 1 cup dry white wine
- 1 bay leaf
- Fresh thyme sprigs (or 1 teaspoon dried thyme)
- Baguette or crusty bread slices (for serving)
- 1 ½ cups grated Gruyère cheese
Instructions
- Slice the onions thinly.
- Melt butter and olive oil in a large pot over medium heat.
- Add sliced onions, salt, and sugar; cook gently, stirring occasionally, for 30 to 40 minutes until caramelized.
- Pour in the wine and simmer for 5 minutes, scraping the pot.
- Add broth, bay leaf, and thyme; stir to combine.
- Bring to a gentle simmer and cook for an additional 20 minutes.
- While simmering, preheat the broiler on high.
- Prepare bread by placing on a baking sheet and topping with cheese; broil for 2-3 minutes until bubbly.
- Ladle soup into bowls, top with cheesy bread, and enjoy!
Notes
For a holiday twist, add a splash of sherry or cognac. If freezing, do so without cheese and add before serving.
