  • 4 cups beef or vegetable broth
  • 1 cup dry white wine
  • 1 bay leaf
  • Fresh thyme sprigs (or 1 teaspoon dried thyme)
  • Baguette or crusty bread slices (for serving)
  • 1 ½ cups grated Gruyère cheese

Instructions

  1. Slice the onions thinly.
  2. Melt butter and olive oil in a large pot over medium heat.
  3. Add sliced onions, salt, and sugar; cook gently, stirring occasionally, for 30 to 40 minutes until caramelized.
  4. Pour in the wine and simmer for 5 minutes, scraping the pot.
  5. Add broth, bay leaf, and thyme; stir to combine.
  6. Bring to a gentle simmer and cook for an additional 20 minutes.
  7. While simmering, preheat the broiler on high.
  8. Prepare bread by placing on a baking sheet and topping with cheese; broil for 2-3 minutes until bubbly.
  9. Ladle soup into bowls, top with cheesy bread, and enjoy!

Notes

For a holiday twist, add a splash of sherry or cognac. If freezing, do so without cheese and add before serving.
