Description
Classic Blueberry Oatmeal Cookies are comforting, slightly chewy treats studded with bursts of bright blueberry, perfect for any occasion.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 2 1/2 cups old-fashioned rolled oats
- 1 to 1 1/2 cups fresh or frozen blueberries
- 1/2 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the softened butter with the brown and granulated sugars until light and fluffy, about 2–3 minutes.
- Beat in the eggs one at a time, then stir in vanilla.
- Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl.
- Fold the dry mixture into the butter-sugar mixture until just combined.
- Stir in the rolled oats and nuts, if using, until evenly distributed.
- Gently fold in the blueberries, being careful not to overmix.
- Drop mounds of dough onto the prepared sheets, leaving about 2 inches between cookies.
- Bake for 10–12 minutes, until edges are lightly golden and centers are set but soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a rack to cool completely.
Notes
For a thicker cookie, chill the dough for 30 minutes before baking. Use frozen blueberries to prevent color bleeding in the dough.
