A moist and delicious loaf of banana bread made with ripe bananas and pantry staples, perfect for breakfast, snacks, or dessert.

- 1/2 cup unsalted butter, melted and cooled
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 1/4 cup mashed ripe bananas
- 1/4 cup sour cream, room temperature
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp kosher salt
- 1/2 tsp ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and adjust the oven rack to the lower-middle position. Grease an 8.5 x 4.5-inch loaf pan with softened butter and lightly flour it.
- Melt the butter in a microwave-safe bowl and allow it to cool for about 10 minutes. Whisk it with the sugar until you achieve a paste-like consistency.
- Add the eggs one at a time, mixing well after each addition. Then stir in the mashed bananas, sour cream, and vanilla extract until evenly combined.
- Sift in the dry ingredients: flour, baking soda, kosher salt, and ground cinnamon. Mix just until everything is combined, avoiding over-mixing.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 60-65 minutes, or until a toothpick inserted into the middle comes out clean.
- Allow the banana bread to cool in the pan for 30 minutes, then remove from the pan and cool completely before slicing.
Notes
Serve warm with a pat of butter or toast for added richness. For variation, add chocolate chips or nuts.
