Description

A moist and delicious loaf of banana bread made with ripe bananas and pantry staples, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/4 cup mashed ripe bananas
  • 1/4 cup sour cream, room temperature
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and adjust the oven rack to the lower-middle position. Grease an 8.5 x 4.5-inch loaf pan with softened butter and lightly flour it.
  2. Melt the butter in a microwave-safe bowl and allow it to cool for about 10 minutes. Whisk it with the sugar until you achieve a paste-like consistency.
  3. Add the eggs one at a time, mixing well after each addition. Then stir in the mashed bananas, sour cream, and vanilla extract until evenly combined.
  4. Sift in the dry ingredients: flour, baking soda, kosher salt, and ground cinnamon. Mix just until everything is combined, avoiding over-mixing.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 60-65 minutes, or until a toothpick inserted into the middle comes out clean.
  7. Allow the banana bread to cool in the pan for 30 minutes, then remove from the pan and cool completely before slicing.

Notes

Serve warm with a pat of butter or toast for added richness. For variation, add chocolate chips or nuts.
