Ingredients

  • 2 cups cooked chicken, chopped (rotisserie or grilled)
  • 4 large romaine leaves, chopped (about 4 cups)
  • 1 cup croutons, coarsely crushed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing
  • 4 large flour tortillas or wraps
  • 1 lemon, cut into wedges
  • Freshly ground black pepper and a pinch of salt to taste
  • Optional: crispy bacon bits, chopped parsley, or a handful of cherry tomatoes

Instructions

  1. Warm the chicken and tortillas: If using refrigerated chicken, warm it briefly in a skillet. Wrap the tortillas in foil and warm for a minute or two.
  2. Chop and toss: In a large bowl, combine chopped romaine, crushed croutons, grated Parmesan, and chopped chicken. Toss gently.
  3. Dress and season: Add Caesar dressing a little at a time, tossing until leaves are coated.
  4. Assemble the wraps: Lay a warm tortilla flat and spoon salad across the center. Fold up and roll tightly.
  5. Toast if desired: Grill the assembled wraps in a skillet for 2–3 minutes per side until golden.
  6. Serve and savor: Slice each wrap in half and serve immediately with lemon wedges.

Notes

For a vegan version, substitute chicken with tofu and use a vegan Caesar dressing.
