Instructions

  1. Prepare your banana slices: Peel the bananas and slice into 1/2-inch rounds. Lay them out on a parchment-lined tray so they don’t stick.
  2. Chill briefly (optional): If your kitchen is warm, pop the tray into the freezer for 5 minutes so the slices are slightly firmer.
  3. Melt the chocolate: In a double boiler or a heatproof bowl over simmering water, melt the dark chocolate chips with the coconut oil, stirring until smooth and glossy.
  4. Add peanut butter: Stir half a tablespoon of peanut butter into the melted chocolate for an extra swirl of flavor.
  5. Dip the bananas: Use a fork to dip each banana slice into the melted chocolate, or spoon chocolate over the top and let it drip down the sides.
  6. Add peanut butter topping: Dollop a small spoonful of peanut butter on each warm chocolate-covered banana.
  7. Sprinkle and set: While the chocolate is still soft, sprinkle chopped peanuts or cacao nibs on top, and finish with a light dusting of sea salt.
  8. Chill to set: Transfer the tray to the refrigerator for about 10 minutes until the chocolate firms up.
