Description

A comforting homemade recipe featuring tender chicken wrapped in soft tortillas with fresh veggies and a creamy sauce.


Ingredients

  • 2 Boneless, skinless Chicken Breasts
  • 4 Large Tortillas
  • 1 red Bell Pepper
  • 1 yellow Bell Pepper
  • 1 small Red Onion
  • ½ cup Greek Yogurt
  • 2 tablespoons Lemon Juice
  • 2 cloves Garlic
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt, pepper, and garlic powder.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat, add chicken, and sauté for 5-7 minutes until cooked through.
  3. While chicken cooks, slice bell peppers and red onion. Add to the skillet and sauté for an additional 3-4 minutes until veggies soften.
  4. In a bowl, mix Greek yogurt, lemon juice, and minced garlic to create the sauce.
  5. Warm tortillas, then layer chicken mixture and drizzle with the yogurt sauce, wrapping tightly.
  6. Serve on a platter with additional sauce on the side.

Notes

For a healthier option, use grilled tofu instead of chicken or whole wheat tortillas.
