- 2 Boneless, skinless Chicken Breasts
- 4 Large Tortillas
- 1 red Bell Pepper
- 1 yellow Bell Pepper
- 1 small Red Onion
- ½ cup Greek Yogurt
- 2 tablespoons Lemon Juice
- 2 cloves Garlic
- 2 tablespoons Olive Oil
- Salt and Pepper to taste
Instructions
- Cut the chicken breasts into bite-sized pieces and season with salt, pepper, and garlic powder.
- Heat 1 tablespoon of olive oil in a skillet over medium heat, add chicken, and sauté for 5-7 minutes until cooked through.
- While chicken cooks, slice bell peppers and red onion. Add to the skillet and sauté for an additional 3-4 minutes until veggies soften.
- In a bowl, mix Greek yogurt, lemon juice, and minced garlic to create the sauce.
- Warm tortillas, then layer chicken mixture and drizzle with the yogurt sauce, wrapping tightly.
- Serve on a platter with additional sauce on the side.
Notes
For a healthier option, use grilled tofu instead of chicken or whole wheat tortillas.
