Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup green beans, trimmed and cut
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, cooking for about 3 minutes until translucent.
  3. Add the chicken breasts, searing for 4-5 minutes on each side until golden brown.
  4. Toss in the sliced carrots and chopped celery, cooking for an additional 3 minutes.
  5. Pour in the chicken broth, add the green beans and dried thyme, bringing the mixture to a boil.
  6. Reduce the heat to low and let it simmer for about 15 minutes.
  7. Remove the chicken breasts, shred them, and return to the pot, seasoning with salt and pepper.
  8. Ladle the soup into bowls, garnishing with fresh parsley before serving hot.
