- 1 lb boneless, skinless chicken breasts
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 jalapeño, seeded and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes (with green chilies)
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Corn tortillas, cut into strips
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large pot, add a splash of olive oil over medium heat. Season the chicken breasts with salt and pepper, then cook for about 5-7 minutes on each side until golden brown. Remove and let rest on a cutting board.
- In the same pot, add the diced onion and jalapeño, sautéing until soft and translucent, about 3-5 minutes. Toss in the minced garlic and stir for another minute until fragrant.
- Add the cumin, chili powder, diced tomatoes, and chicken broth. Stir to combine, letting everything bubble gently.
- Return to your resting chicken. Shred it into bite-sized pieces and stir it back into the pot. Add the black beans. Let it simmer for 10-15 minutes, allowing the flavors to come together.
- While the soup simmers, heat a small amount of oil in a skillet. Fry the tortilla strips until they are crispy and golden, around 2-3 minutes total. Drain on paper towels and sprinkle with salt.
- Ladle the soup into bowls, top with crispy tortilla strips, fresh cilantro, and a squeeze of lime.
Notes
Consider using Greek yogurt instead of sour cream for a healthier option. You can customize the soup by adding more vegetables or adjusting the spice level.
