Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes (with green chilies)
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Corn tortillas, cut into strips
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, add a splash of olive oil over medium heat. Season the chicken breasts with salt and pepper, then cook for about 5-7 minutes on each side until golden brown. Remove and let rest on a cutting board.
  2. In the same pot, add the diced onion and jalapeño, sautéing until soft and translucent, about 3-5 minutes. Toss in the minced garlic and stir for another minute until fragrant.
  3. Add the cumin, chili powder, diced tomatoes, and chicken broth. Stir to combine, letting everything bubble gently.
  4. Return to your resting chicken. Shred it into bite-sized pieces and stir it back into the pot. Add the black beans. Let it simmer for 10-15 minutes, allowing the flavors to come together.
  5. While the soup simmers, heat a small amount of oil in a skillet. Fry the tortilla strips until they are crispy and golden, around 2-3 minutes total. Drain on paper towels and sprinkle with salt.
  6. Ladle the soup into bowls, top with crispy tortilla strips, fresh cilantro, and a squeeze of lime.

Notes

Consider using Greek yogurt instead of sour cream for a healthier option. You can customize the soup by adding more vegetables or adjusting the spice level.
