- 1 cup uncooked rice (white or brown)
- 4 cups chicken broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced

- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Prep the Ingredients: Chop the onion, carrots, and celery. Mince the garlic.
- Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté for about 5 minutes until softened and fragrant.
- Add Garlic and Chicken: Stir in garlic and chicken, season with salt, pepper, and thyme. Cook for about 5 minutes until chicken starts to turn golden.
- Pour in Broth and Rice: Add chicken broth and rice, bringing everything to a low simmer.
- Simmer: Cook uncovered for about 15 minutes, until chicken is cooked and rice is softened.
- Shred the Chicken: Remove chicken breasts, shred them, and return to pot.
- Serve: Garnish with parsley and enjoy!

Feel free to experiment with herbs and seasonal vegetables. Add cream for a richer flavor.
