- 4 boneless, skinless chicken breasts (about 1 1/2 pounds)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 small yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream or half-and-half
- 1 tablespoon Dijon mustard
- 2 teaspoons fresh thyme leaves or 1/2 teaspoon dried thyme
- 2 tablespoons chopped fresh parsley
- Lemon wedges for serving, optional
Instructions
- Pat the chicken dry and season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat until shimmering.
- Sear the chicken for 4 to 5 minutes per side, until golden brown and almost cooked through. Transfer to a plate and tent with foil.
- Reduce heat to medium and add butter to the pan. Stir in the chopped onion and cook until translucent, about 3 minutes.
- Add garlic and cook 30 seconds more until fragrant.
- Pour in the white wine to deglaze the pan, scraping up browned bits with a wooden spoon. Let it simmer and reduce by half, about 3 to 4 minutes.
- Stir in the chicken broth, Dijon mustard, and thyme. Return the chicken to the pan, spooning some sauce over the pieces. Simmer gently for 5 to 7 minutes until the chicken reaches 165°F.
- Remove the chicken once more and whisk in the cream. Let the sauce thicken for 2 to 3 minutes.
- Return the chicken to the sauce, spoon it generously, and finish with chopped parsley. Serve immediately.
