- 1 pound ground beef or turkey
- 1 can black beans (15 ounces)
- 1 cup corn kernels
- 1 packet taco seasoning
- 2 cups shredded cheese
- Optional toppings: diced tomatoes, sour cream, fresh cilantro, avocado
Instructions
- In a medium pot, prepare the brown rice according to package instructions.
- In a large skillet over medium heat, cook the ground beef or turkey until browned.
- Stir in the black beans and corn once the meat is browned and let it simmer for about 2 minutes.
- Sprinkle taco seasoning over the mixture, followed by half a cup of water; stir to combine and let it simmer until slightly thickened (around 3-5 minutes).
- Once ready, add your cooked rice to the skillet and fold everything together; cook for another minute.
- Sprinkle cheese on top and cover it with a lid; allow the cheese to melt into a gooey masterpiece (about 2-3 minutes).
- Stir once more and top with your favorite toppings before serving.
