  • 1 pound ground beef or turkey
  • 1 can black beans (15 ounces)
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • Optional toppings: diced tomatoes, sour cream, fresh cilantro, avocado

Instructions

  1. In a medium pot, prepare the brown rice according to package instructions.
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned.
  3. Stir in the black beans and corn once the meat is browned and let it simmer for about 2 minutes.
  4. Sprinkle taco seasoning over the mixture, followed by half a cup of water; stir to combine and let it simmer until slightly thickened (around 3-5 minutes).
  5. Once ready, add your cooked rice to the skillet and fold everything together; cook for another minute.
  6. Sprinkle cheese on top and cover it with a lid; allow the cheese to melt into a gooey masterpiece (about 2-3 minutes).
  7. Stir once more and top with your favorite toppings before serving.
