- 12 ounces of cheese tortellini (fresh or frozen)
- 1 cup of pizza sauce (store-bought or homemade)
- 1 cup of shredded mozzarella cheese
- 1/2 cup of sliced pepperoni (or your favorite toppings like bell peppers or olives)
- 1 tablespoon of olive oil
- 1/2 cup of chopped onion
- 1 teaspoon of minced garlic
- 1/2 teaspoon of Italian seasoning
- Salt and pepper to taste
Instructions
- Start by gathering all the ingredients. Chop the onions and mince the garlic.
- Boil a pot of salted water and cook the tortellini according to package instructions, generally about 3-5 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, stirring for about 2-3 minutes until soft and fragrant.
- Lower the heat and add the cooked tortellini, pizza sauce, and Italian seasoning. Stir to combine.
- Add half of the mozzarella cheese on top, then add your pepperoni or preferred toppings. Finish with the remaining mozzarella.
- Cover with a lid and let it simmer on low heat for about 10 minutes, until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
For a gluten-free option, use gluten-free tortellini. Good pairings include a green salad or garlic bread.
