Description
A delicious twist on classic lasagna, these roll-ups are filled with a creamy ricotta and spinach mixture, topped with marinara sauce and melted cheese.

- 9–12 Lasagna Noodles
- 15 ounces Ricotta Cheese
- 2 cups Fresh Spinach, chopped
- 2 cups shredded Mozzarella Cheese
- 2 cups Marinara Sauce
- 1 large Egg
- Salt and Pepper, to taste
- 1 teaspoon Garlic Powder
- Parmesan Cheese, for topping (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the lasagna noodles according to package instructions until al dente. Drain and lay them flat on parchment paper to cool.
- In a large bowl, combine ricotta cheese, chopped spinach, mozzarella, the beaten egg, garlic powder, salt, and pepper. Mix until smooth and well-incorporated.
- Spread a thin layer of marinara sauce on each noodle. Spoon about 3 tablespoons of the cheese mixture along one end and roll it up tightly. Place seam-side down in a baking dish.
- Continue until all noodles are filled and rolled.
- Pour the remaining marinara sauce over the rolls, covering them generously. Sprinkle with extra mozzarella and Parmesan cheese.
- Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until bubbly and golden brown.
- Let cool for a few minutes before serving and enjoy!
Notes
Add dried Italian herbs for extra flavor or mix in sautéed veggies for variety. They store well and reheat beautifully!
