Ingredients

  • 1 can cream of mushroom soup (or mushroom gravy for semi-homemade)
  • 1 cup long grain white rice, uncooked
  • 2 cups water
  • 1 cup carrots, sliced
  • 1/21 pound ground beef, cooked
  • Cheddar or Colby Jack cheese, sliced (or grated)

Instructions

  • Preheat oven to 350°F. Grease an 8×9-inch baking dish.
  • Stir together the soup/gravy, rice, water, carrots, and cooked beef.
  • Pour the mixture into the baking dish and bake for 90 minutes.
  • Top with cheese and bake for an additional 2-3 minutes until melted.
  • Let the casserole rest for a few minutes, then serve and enjoy!
