A cheesy, comforting casserole with ground beef, rice, and carrots, baked to perfection and topped with melty cheese.

- 1 can cream of mushroom soup (or mushroom gravy for semi-homemade)
- 1 cup long grain white rice, uncooked
- 2 cups water
- 1 cup carrots, sliced
- 1/2–1 pound ground beef, cooked
- Cheddar or Colby Jack cheese, sliced (or grated)
Instructions
- Preheat oven to 350°F. Grease an 8×9-inch baking dish.
- Stir together the soup/gravy, rice, water, carrots, and cooked beef.
- Pour the mixture into the baking dish and bake for 90 minutes.
- Top with cheese and bake for an additional 2-3 minutes until melted.
- Let the casserole rest for a few minutes, then serve and enjoy!
