- 3 cups shredded cooked chicken
- 8 ounces cream cheese, softened
- 1/2 cup sour cream or plain Greek yogurt
- 1/2 cup buffalo sauce
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded Monterey Jack or mozzarella
- 1/4 cup ranch or blue cheese dressing
- 1 tablespoon melted butter (optional)
- 2 green onions, thinly sliced, plus extra for garnish
- Celery sticks, carrot sticks, tortilla chips, or toasted baguette slices for serving
Instructions
- Combine the base: In the crock pot, add softened cream cheese, sour cream or Greek yogurt, buffalo sauce, ranch or blue cheese dressing, and melted butter. Stir until mostly smooth.
- Add the chicken and cheese: Fold in the shredded chicken, 3/4 cup of the cheddar, and 1/2 cup of the Monterey Jack or mozzarella. Mix so the cheese is evenly distributed.
- Cook gently: Cover and cook on low for 90–120 minutes or on high for 45–60 minutes. Stir every 30 minutes to prevent sticking and to help the cheese melt uniformly.
- Finish and garnish: When the dip is bubbling and creamy, sprinkle the remaining cheddar and a few extra green onions on top.
- Serve warm: Transfer the crock pot to the table or scoop into an oven-safe dish and broil for 1–2 minutes for a golden top.
Notes
Use rotisserie chicken for quicker prep; substitute Greek yogurt for a healthier option. Store leftovers in an airtight container for up to 3 days.
