Description

A rich, creamy Cheddar Cheese Potato Soup that offers cozy warmth and comfort, perfect for chilly days.

Ingredients

Scale
  • 4 medium Potatoes (gold or red)
  • 1 medium Onion
  • 2 medium Carrots
  • 3 cloves Garlic
  • 4 cups Vegetable or Chicken Broth
  • 2 cups Cheddar Cheese (shredded)
  • 1 cup Milk or Heavy Cream
  • Salt and Pepper (to taste)
  • 2 tablespoons Olive Oil or Butter

Instructions

  1. In a large pot, heat the olive oil or butter over medium heat. Add the diced onions and carrots, and sauté for about 5 minutes until the onion is translucent.
  2. Add the minced garlic and cook for an additional minute.
  3. Add the diced potatoes and broth, bringing it to a gentle boil, then reduce heat and simmer for about 20 minutes until the potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth, leaving some chunks for texture if preferred.
  5. Return the pot to low heat, stir in the milk or heavy cream until well combined.
  6. Gradually add the cheddar cheese, stirring until melted. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and enjoy.

Notes

This soup pairs well with crusty sourdough bread. For a lower-carb option, substitute potatoes with cauliflower.
