Instructions
- In a large pot, heat the olive oil or butter over medium heat. Add the diced onions and carrots, and sauté for about 5 minutes until the onion is translucent.
- Add the minced garlic and cook for an additional minute.
- Add the diced potatoes and broth, bringing it to a gentle boil, then reduce heat and simmer for about 20 minutes until the potatoes are tender.
- Use an immersion blender to puree the soup until smooth, leaving some chunks for texture if preferred.
- Return the pot to low heat, stir in the milk or heavy cream until well combined.
- Gradually add the cheddar cheese, stirring until melted. Season with salt and pepper to taste.
