- 2 cups cooked rice
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup vegetable or chicken broth
- 1/2 cup milk
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the broccoli florets and a pinch of salt. Sauté for about 5 minutes until they’re bright green and tender-crisp.
- Stir in the cooked rice, mixing it well with the broccoli, and let them cook together for about 3 minutes.
- Slowly add the vegetable or chicken broth, stirring as it simmers.
- Stir in the milk and garlic powder, allowing the mixture to bubble gently.
- Lower the heat and add the shredded cheddar cheese, stirring until it melts into the mixture. Season with salt and pepper as needed.
- Once everything is well-combined and gooey, remove it from the heat and serve.
Notes
Leftovers can be stored in an airtight container for up to four days. For a vegan option, use plant-based cheese and almond or oat milk.
