Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup vegetable or chicken broth
  • 1/2 cup milk
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the broccoli florets and a pinch of salt. Sauté for about 5 minutes until they’re bright green and tender-crisp.
  3. Stir in the cooked rice, mixing it well with the broccoli, and let them cook together for about 3 minutes.
  4. Slowly add the vegetable or chicken broth, stirring as it simmers.
  5. Stir in the milk and garlic powder, allowing the mixture to bubble gently.
  6. Lower the heat and add the shredded cheddar cheese, stirring until it melts into the mixture. Season with salt and pepper as needed.
  7. Once everything is well-combined and gooey, remove it from the heat and serve.

Notes

Leftovers can be stored in an airtight container for up to four days. For a vegan option, use plant-based cheese and almond or oat milk.
