- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 medium carrots, peeled and diced
- 2 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup coconut milk or heavy cream
- Salt and pepper to taste
- Fresh herbs (like thyme or parsley), for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-5 minutes until translucent, followed by the minced garlic.
- Stir in the diced carrots and potatoes, allowing them to cook for another 5 minutes.
- Add the vegetable broth to the pot, ensuring the veggies are covered. Bring to a gentle boil, then lower the heat and let it simmer for about 15 minutes, or until tender.
- Once soft, carefully use an immersion blender to puree the soup until creamy and smooth.
- Stir in the coconut milk or heavy cream. Season with salt and pepper, and let it heat through for a couple of minutes.
- Ladle the soup into bowls, and sprinkle with fresh herbs for garnish.
Notes
For deeper flavor, roast the carrots before adding them to the pot. You can also substitute with sweet potatoes for a twist.
