Ingredients

- 8 oz fettuccine or linguine pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 bell pepper (red or yellow), diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 tbsp cajun seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions
- Cook the pasta in a large pot of boiling salted water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add bell pepper and onion, and cook until softened for about 3-4 minutes.
- Add minced garlic and cook for an additional minute until golden and aromatic.
- Add shrimp, cajun seasoning, salt, and pepper. Cook for about 3-4 minutes until shrimp turn pink and opaque.
- Reduce heat, pour in the heavy cream, and stir well. Let it simmer for a minute to thicken the sauce.
- Toss the drained pasta into the skillet and mix until coated with sauce.
- Garnish with fresh parsley and sprinkle with Parmesan cheese if desired. Serve immediately.
Notes
For a spicy kick, add jalapeños or hot sauce. To make it lighter, replace heavy cream with Greek yogurt.
