- 1 pound ground chicken
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- ½ cup chicken broth
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Buns for serving
Instructions
- In a large skillet over medium heat, add a drizzle of olive oil. Toss in the diced bell pepper and onion, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the ground chicken and break it apart as it cooks until no pink is visible, about 5–7 minutes.
- Sprinkle in the Cajun seasoning, ensuring the meat is coated evenly.
- Pour in the chicken broth and let it simmer for a few minutes until it slightly thickens.
- Lower the heat and mix in the cream cheese, stirring until fully melted and creamy.
- Remove from heat and fold in the shredded cheddar cheese, allowing it to melt into the sauce.
- Scoop the Cajun chicken mixture onto buns and enjoy!
