Ingredients

  • 1 lb smoked sausage (Andouille or kielbasa)
  • 1 small head of cabbage (Savoy or green)
  • 1 large onion
  • 23 cloves of fresh garlic
  • 1 bell pepper
  • 1 can of diced tomatoes
  • 2 tablespoons Cajun seasoning
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil
  • Fresh parsley (chopped for garnish)

Instructions

  1. Prepare your ingredients by slicing the sausage, chopping the cabbage, dicing the onion and bell pepper, and mincing the garlic.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the sliced sausage to the skillet and cook until browned, about 5-7 minutes.
  4. Incorporate the chopped onion and bell pepper, sautéing for another 3-5 minutes.
  5. Add the minced garlic and sauté for 1 minute.
  6. Stir in the cabbage and mix well.
  7. Pour in the diced tomatoes and sprinkle Cajun seasoning, season with salt and pepper, and simmer for about 10 minutes.
  8. Garnish with freshly chopped parsley before serving.

Notes

For added spice, include cayenne pepper or jalapeños. Substitute sausage for plant-based proteins for a vegetarian option.
