- 1 lb smoked sausage (Andouille or kielbasa)
- 1 small head of cabbage (Savoy or green)
- 1 large onion
- 2–3 cloves of fresh garlic
- 1 bell pepper
- 1 can of diced tomatoes
- 2 tablespoons Cajun seasoning
- Salt and pepper (to taste)
- 2 tablespoons olive oil
- Fresh parsley (chopped for garnish)
Instructions
- Prepare your ingredients by slicing the sausage, chopping the cabbage, dicing the onion and bell pepper, and mincing the garlic.
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced sausage to the skillet and cook until browned, about 5-7 minutes.
- Incorporate the chopped onion and bell pepper, sautéing for another 3-5 minutes.
- Add the minced garlic and sauté for 1 minute.
- Stir in the cabbage and mix well.
- Pour in the diced tomatoes and sprinkle Cajun seasoning, season with salt and pepper, and simmer for about 10 minutes.
- Garnish with freshly chopped parsley before serving.
Notes
For added spice, include cayenne pepper or jalapeños. Substitute sausage for plant-based proteins for a vegetarian option.
