Ingredients

- 1 medium head of cabbage, chopped
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves fresh garlic, minced
- 6 cups vegetable or chicken broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup cooked beans or lentils (optional)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat until shimmering.
- Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes or until the veggies start to soften and the onion becomes translucent.
- Stir in the minced garlic and cook for another minute, until fragrant.
- Add the chopped cabbage to the pot. Stir well and cook for another 5 minutes until it wilts down slightly.
- Add the vegetable or chicken broth along with the canned diced tomatoes, thyme, and bay leaf. Bring to a gentle boil.
- Reduce heat to low and let the soup simmer for about 15-20 minutes. Stir occasionally, and season with salt and pepper to taste.
- If using beans or lentils, stir them in during the last few minutes of cooking to warm through.
Notes
Customize with seasonal vegetables and fresh herbs for added flavor. This soup freezes well for future meals.
