  • 1 large head of cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: Sour cream or Greek yogurt for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent, about 4-5 minutes.
  3. Stir in minced garlic and cook for an additional 1-2 minutes.
  4. Add ground beef (or turkey), and cook until browned and fully cooked through.
  5. Stir in chopped cabbage, letting it wilt down as it cooks.
  6. Combine diced tomatoes and beef broth, and stir in oregano, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat to a simmer. Cook uncovered for about 20-25 minutes, until cabbage is tender.
