- 1 medium Butternut Squash
- 9 lasagna noodles
- 1 cup Ricotta cheese
- 2 cups fresh spinach
- 1 cup marinara sauce
- 1 cup Mozzarella cheese, shredded
- 1 egg
- Salt and pepper to taste
- Fresh basil and oregano (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the butternut squash: Cut in half, scoop seeds, and roast cut-side down for about 25 minutes.
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a bowl, mix cooked squash flesh, ricotta cheese, spinach, egg, salt, and pepper.
- Spread a thin layer of marinara sauce at the bottom of a baking dish.
- Assemble the roll ups by placing 2-3 tablespoons of the squash mixture on one end of a noodle and rolling it up.
- Place seam-side down in the baking dish; repeat with remaining noodles.
- Pour remaining marinara sauce over top and sprinkle with mozzarella cheese.
- Bake for about 25 minutes or until cheese is bubbly and golden.
- Let cool for a few minutes before serving.
