Ingredients

  • 1 medium Butternut Squash
  • 9 lasagna noodles
  • 1 cup Ricotta cheese
  • 2 cups fresh spinach
  • 1 cup marinara sauce
  • 1 cup Mozzarella cheese, shredded
  • 1 egg
  • Salt and pepper to taste
  • Fresh basil and oregano (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the butternut squash: Cut in half, scoop seeds, and roast cut-side down for about 25 minutes.
  3. Cook lasagna noodles according to package instructions; drain and set aside.
  4. In a bowl, mix cooked squash flesh, ricotta cheese, spinach, egg, salt, and pepper.
  5. Spread a thin layer of marinara sauce at the bottom of a baking dish.
  6. Assemble the roll ups by placing 2-3 tablespoons of the squash mixture on one end of a noodle and rolling it up.
  7. Place seam-side down in the baking dish; repeat with remaining noodles.
  8. Pour remaining marinara sauce over top and sprinkle with mozzarella cheese.
  9. Bake for about 25 minutes or until cheese is bubbly and golden.
  10. Let cool for a few minutes before serving.
