Description

A heartwarming homemade recipe that combines perfectly cooked pasta with sautéed broccoli and garlic for a comforting family meal.


Ingredients

  • 8 oz. of your favorite pasta (spaghetti, penne, or whole grain)
  • 2 cups of fresh broccoli florets
  • 4 cloves of fresh garlic, minced
  • 1/4 cup of extra virgin olive oil
  • Salt and pepper to taste
  • 1 lemon, zested and juiced
  • 1/2 cup of grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, careful not to let it burn.
  3. Toss in the fresh broccoli florets and a pinch of salt, sautéing for an additional 3-4 minutes until they turn bright green and tender-crisp.
  4. Add the drained pasta to the skillet with the broccoli. Pour in the reserved pasta water and mix everything well over low heat, allowing the flavors to meld for about 2 minutes.
  5. Remove from heat, then stir in lemon juice and zest. Sprinkle in the grated Parmesan cheese, tossing to combine until creamy and well-coated.
  6. Divide the Broccoli Pasta into bowls, adding a sprinkle of extra cheese and a dash of cracked pepper as desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of olive oil or reserved pasta water.
