Description
A heartwarming homemade recipe that combines perfectly cooked pasta with sautéed broccoli and garlic for a comforting family meal.
Ingredients
Scale
- 8 oz. of your favorite pasta (spaghetti, penne, or whole grain)
- 2 cups of fresh broccoli florets
- 4 cloves of fresh garlic, minced
- 1/4 cup of extra virgin olive oil
- Salt and pepper to taste
- 1 lemon, zested and juiced
- 1/2 cup of grated Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, careful not to let it burn.
- Toss in the fresh broccoli florets and a pinch of salt, sautéing for an additional 3-4 minutes until they turn bright green and tender-crisp.
- Add the drained pasta to the skillet with the broccoli. Pour in the reserved pasta water and mix everything well over low heat, allowing the flavors to meld for about 2 minutes.
- Remove from heat, then stir in lemon juice and zest. Sprinkle in the grated Parmesan cheese, tossing to combine until creamy and well-coated.
- Divide the Broccoli Pasta into bowls, adding a sprinkle of extra cheese and a dash of cracked pepper as desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of olive oil or reserved pasta water.
