Broccoli Pasta: A Simple and Flavorful Weeknight Dish

A light and flavorful pasta dish made with broccoli, garlic, red pepper flakes, and parmesan cheese. Simple and satisfying!


Ingredients

  • 1 pound broccoli (fresh or frozen)

  • 12 ounces short pasta

  • 3 tablespoons extra virgin olive oil

  • 2 cloves garlic, minced

  • 1/4 teaspoon red pepper flakes

  • 1/2 cup grated parmesan cheese

  • 1 handful basil leaves

  • Salt and pepper, to taste


Instructions

  • Boil the broccoli in salted water for 5 minutes. Reserve 1 cup of pasta water.

  • Cook the pasta according to package directions, reserving 1 cup of pasta water before draining.

  • Heat olive oil in a skillet over medium heat. Sauté garlic and red pepper flakes for 1 minute.

  • Add cooked broccoli to the skillet with 1 cup of reserved broccoli water. Simmer for 10 minutes. Mash or blend to your desired texture.

  • Add cooked pasta and parmesan cheese. Stir for 1 minute, adding pasta water as needed.

  • Serve topped with fresh basil and extra parmesan.
