- 1 ½ cups Sharp Cheddar Cheese, shredded
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 4 cups Vegetable or Chicken Broth
- 1 cup Heavy Cream
- 2 tablespoons Butter
- ¼ cup Flour
- Salt and Pepper, to taste
Instructions
- Melt the butter in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic for an additional minute until fragrant.
- Sprinkle the flour over the onions and garlic, stirring to combine. Cook for another 2 minutes to make a roux.
- Gradually whisk in the broth, ensuring there are no lumps. Bring to a gentle simmer.
- Add the chopped broccoli and cook for about 8-10 minutes until tender.
- For a creamy texture, use an immersion blender to puree the soup until smooth or transfer to a blender in batches.
- Stir in the heavy cream and shredded Cheddar cheese until melted and creamy. Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with extra cheese or fresh herbs if desired.
