Ingredients

  • 2 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Broth
  • 1 cup Heavy Cream
  • 2 tablespoons Butter
  • ¼ cup Flour
  • Salt and Pepper, to taste

Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic for an additional minute until fragrant.
  2. Sprinkle the flour over the onions and garlic, stirring to combine. Cook for another 2 minutes to make a roux.
  3. Gradually whisk in the broth, ensuring there are no lumps. Bring to a gentle simmer.
  4. Add the chopped broccoli and cook for about 8-10 minutes until tender.
  5. For a creamy texture, use an immersion blender to puree the soup until smooth or transfer to a blender in batches.
  6. Stir in the heavy cream and shredded Cheddar cheese until melted and creamy. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and garnish with extra cheese or fresh herbs if desired.
