- 400g broccoli florets
- 400g cauliflower florets
- 200g sharp cheddar cheese
- 100g cream cheese
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 250ml milk
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: breadcrumbs or additional cheese
Instructions
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and minced garlic, cooking until softened and fragrant, about 5 minutes.
- In a pot of boiling water, blanch the broccoli and cauliflower for about 3-4 minutes until bright in color but still crisp. Drain and set aside.
- In the same skillet, lower the heat and add the cream cheese and milk. Stir continuously until smooth, then gradually add the shredded cheddar cheese, allowing it to melt. Season with salt and pepper to taste.
- Combine the blanched vegetables with the cheese sauce in a large mixing bowl. Transfer to a greased baking dish and top with additional cheese or breadcrumbs if desired.
- Bake for 25-30 minutes, or until bubbling and golden brown on top.
Notes
To make it healthier, reduce cheese or add proteins like chicken or chickpeas. Incorporate spinach or kale for extra nutrients.
