- 1 pound boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1/2 cup bourbon
- 1/4 cup soy sauce
- 1/2 cup brown sugar
- 1 tablespoon fresh ginger, minced
- 3 cloves garlic, minced
- 1 tablespoon cornstarch
- Salt and pepper to taste
Instructions
- Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and cook for 5–7 minutes until golden brown.
- Reduce the heat to medium, add the minced garlic and ginger, and stir for about 1 minute until fragrant.
- Pour in the bourbon, soy sauce, and brown sugar. Stir well and let it bubble to meld the flavors.
- Mix cornstarch with a bit of water to create a slurry, add to the skillet, stirring constantly until the sauce thickens, about 3–5 minutes.
- Remove from heat and serve over white rice or alongside steamed veggies.
Notes
For a lighter version, use chicken breasts instead of thighs. Add seasonal vegetables for extra nutrition.
